Gosh I can't believe the summer is coming to an end. How sad I am AND there isn't one single post I have written about it. It had been such a long time I forgot the name of our blog!! Well so here are a few pictures of this summer and what we had been up to. We went to Utah a couple times, I went to girls camp, we had family come and stay with us, went camping at the lake, and that is about all. But we had a fun time and I am sad it is over :( except for how stinkin hot it is!

Lucy loved camping (except when it was time for bed, that was a bit rough for the both of us).

She loved being on the 4 wheeler, she could never get enough of that or of all the pop she drank.

Our homemade wagon and no, we can't afford a wagon!

A little worn out from swinging you could say.

Oh my gosh I was so glad when that HUGE jar of pickles were gone. I was sick of my little girl smelling like pickles, but it is cute how much she loves those darn things.
So Lucy's hair is getting quite scraggly and long in the back but it curls and I just can't bring myself to cut it (I know so stupid). So I thought if she would let me do something with it I wouldn't have to cut it. The pigtails were so cute but only lasted about 5 minutes till she realized there was something in her hair. EErrrr!

Some new things....

Lucy calling to tell everyone she is excited about her new baby sister on the way!!

Getting ready for the day...and eating an apple.

Before

And after. I am glad that part of our house is done. My kitchen is perfect. we replaced the countertops, got new appliances, a new sink, and painted the cabinets, and tiled the back splash. A lot of work!!! But well worth it.

A beachin' good time

We went to this beach over spring break called Paradise Cove and it was such a nice beach. It was one of the nicer ones I have been to. Anyways we had such a good time. Lucy absolutely loved it. It was really cute watching her get so excited and act so interested in everything. She loved playing in the sand and walking in the water. Spud caught a sand crab and Lucy grabbed it and held it. She is such a daring little girl. I love it. She isn't scared of anything it seems like. Maybe it is cause she is so young too. But we had such a good time and she didn't want to leave even when she face planted it in the sand.

I love her chubby little legs in this picture, I wanna bite 'em!
It was hard for me to leave this hideous picture of me up, (I don't know where my boobs went and I won't even start on my big face!) but it was the only one I have and I wanted to prove I was actually there. Since I never appear in the other pictures. The reason why Lucy is dressed as a bee was cause it was cold and her Auntie Leslie was prepared for her unlike me ;)
Lucy intently planning the building of her sand castle.

Birthday Girl!

Lucy turned 1 this past Saturday. I can't believe it has been a whole year since Lucy was born. The time has just flown by. I was kind of sad but it was really exciting at the same time. She had fun little party with some family and was loving all the attention.

Here is the little brithday girl making her grand entrance. She looked as cute as a cupcake!

Where is the cake???

And we're back

Wow I hadn't realized just how long it had been since I have been on my blog. We have been so busy with buying our house and getting things done, I haven't had much time. When we bought our house it wasn't the prettiest thing but some minor changes helped out a lot. We put in all new flooring, new molding and base, framed out the windows and put in window sills, and painted everything! It looks a lot better to say the least. We started on the outside by getting rid of some unnecessary concrete and planting some fruit trees but it stopped there till we get some more funds ;) All in all it has been fun but will be nice when it is over!
Lucy loves her swing in the backyard!

Lucy and daddy workin on the yard.

And pathetic as it is but that is about all the pictures I have unless I put up Christmas pictures. Yikes! And I guess you can tell who is always taking the pictures (the one not in them haha!)

baby food mania

I have been on a kick with trying to save money and all so I decided that I would make some baby food seeing as how expensive it can get. I was surprised at how easy it was and CHEAP. I just bought this cheap little 10 dollar grinder from Target and a bunch of fresh produce and it made a ton. I have enough for the next 6 weeks. I grinded peaches, plums, peas, sweet potatoes, carrots and green beans then froze them in ice cube trays. So now she gets fresh food in her chubby little tummy and I am saving some moo-la!Lucy and I making green beans (her feet are crackin' me up in the picture!)

DELISH!!

Okay, funny story. So I have had this recipe called Mexican Polenta Casserole in my recipe box since I started my recipe box like 5 years ago. I got it out of a magazine and even cut out the picture and taped it to the back. I have been wanting to cook it for about 2 years now. Everytime I start planning out my menu for the week it always catches my eye and I even put the ingredients on my list but I can never find the one ingredient called polenta and actually had no clue as to what it even was. SO....I googled it and found out it was basically just a prepared cornmeal ingredient type thing. Anyways I found it in the refrigerated section with all the weird cheeses. Here is the recipe I totally recommend it. It is so YUMMY and EASY!

Mexican Polenta Casserole

1 tube (18oz)prepared polenta

3-4 chicken breasts, cooked and shredded

1 c green salsa

2 T chopped fresh cilantro

1tsp ground cumin

2/3 c heavy whipping cream

1 can black beans (drained)

1 can corn (drained)

6 scallions (aka green onions)

2 c grated monterey jack cheese (but you can use any kind of cheese)

Cut polenta in quarter inch slices (24). Mix chicken, salsa, cilantro, and cumin (I also added some hot sauce and chili powder to make more flavor). In a greased 9x13 arrange half of polentas, drizzle 1/3 c of cream over polenta. Top that with half of the beans and half of the corn. Spread half of the chicken mixture over that. Sprinkle half of scallions and half of cheese. Repeat layering. Bake covered for 45-55 minutes at 375°. Let stand for 10 minutes. ENJOY!
